Emergency combo
Hold + and − for 3 seconds to get the default controls back, whatever the mapping.

If a remap leaves you unable to use the menus, hold + and − together for 3 seconds, anywhere. The combo is checked on the raw buttons before any mapping, so no setting can disable it.
In the loader
The default controls are restored at once and the controller settings open, with the message Emergency reset. Press + to save them. Until you save, the change lasts only until the loader closes.
In a game
The defaults are restored and saved at once, to the game’s profile and to the loader’s config/controller/global.json, so the loader uses them too. Each previous file is kept as .bak. A notice says the controls were reset and saved, for the loader too.
In hardware run 27, confirm was remapped to X; after the combo in a game, global.json had confirm: A again and global.json.bak kept the remap.
warning
A single detached Joy-Con has only one of + and −, so it cannot do the combo. Attach both Joy-Con or use a Pro Controller.
Getting the old mapping back
The mapping you had before the combo is in the .bak file next to the profile. Copy it back over the profile on a computer, or over FTP, if you want it again.
